We had pizza. Kinda.

Since starting P90X, G has been on a no/low carb kick. So, Wednesday evening while on Pinterest I found a low carb pizza. It seemed easy enough. So, yesterday I stopped by the grocery store and purchased everything we needed. You can find the recipe here. And you can find me on Pinterest and then I can steal all of your recipes, too.
If you're thinking about trying this (and you should) here are some photos and suggestions.

Here is what the "crust" looked like after it had been in the oven for about 20 minutes. Looking back we probably would have baked it for about 23-24 minutes to harden it up even more. I think as long as it's not brown on the bottom you're safe.

After it cooled for 10 minutes we added the sauce, cheese, pepperonis and green pepper - we love us some green pepper.
The finished product was nice. It was melted -  looking like flat bread almost. It reminded me how how elementary school cafeteria pizza looked - but tasted way better than that.

It was pretty tasty! How can you go wrong with cheese, pepperoni and more cheese? We would do it again but cook the crust longer and maybe add more toppings - like pineapple. And, we'd probably have a small salad with it as I had two slices and G had the rest - next time it would make enough for two and enough for lunch the next day if you made a salad with it. Yay for Pinterest!
