Since starting P90X, G has been on a no/low carb kick. So, Wednesday evening while on Pinterest I found a low carb pizza. It seemed easy enough. So, yesterday I stopped by the grocery store and purchased everything we needed. You can find the recipe

| Here is what the "crust" looked like after it had been in the oven for about 20 minutes. Looking back we probably would have baked it for about 23-24 minutes to harden it up even more. I think as long as it's not brown on the bottom you're safe. |

| After it cooled for 10 minutes we added the sauce, cheese, pepperonis and green pepper - we love us some green pepper. |

| The finished product was nice. It was melted - looking like flat bread almost. It reminded me how how elementary school cafeteria pizza looked - but tasted way better than that. |

It was pretty tasty! How can you go wrong with cheese, pepperoni and more cheese? We would do it again but cook the crust longer and maybe add more toppings - like pineapple. And, we'd probably have a small salad with it as I had two slices and G had the rest - next time it would make enough for two and enough for lunch the next day if you made a salad with it. Yay for Pinterest!
